Ingredients:
Thawed Pre-Cooked Shrimp (medium size or smaller)
2 Stalks Celery
1 Lemon
1 Tomato
1/2 Onion
2 Cloves Garlic
1 Avocado
1/2 C. Goat Cheese
Olive Oil
Salt
Pepper
lets get cooking!
- Rinse and pat dry about 3 to 4 C. Shrimp
- Set shrimp in large mixing bowl.
- Rinse and chop celery into 1/4" thick slices
- Add chopped celery to the Shrimp bowl
- Cut lemon in half and squeeze juice into mixing bowl
- Dice the tomato and add to bowl
- Dice onion and add to bowl
- Mince garlic and add to bowl
- Cut avocado into 1/2" cubes and add to bowl
- Add Goat Cheese
- Drizzle with about 2tablespoons of Olive Oil
- Add salt and Pepper to taste
- Mix contents of bowl together
- Chill salad for about 30 minute to an hour.
- Enjoy! Salad will stay good for about 2 days because of browning avocado!
