Summer Crisp Shrimp Salad

This chilled summer salad can be a great snack or meal! 






Ingredients:


Thawed Pre-Cooked Shrimp (medium size or smaller)
2 Stalks Celery
1 Lemon
1 Tomato
1/2 Onion
2 Cloves Garlic
1 Avocado
1/2 C. Goat Cheese
Olive Oil
Salt 
Pepper


lets get cooking!
  1. Rinse and pat dry about 3 to 4 C. Shrimp
  2. Set shrimp in large mixing bowl.
  3. Rinse and chop celery into 1/4" thick slices
  4. Add chopped celery to the Shrimp bowl
  5. Cut lemon in half and squeeze juice into mixing bowl 
  6. Dice the tomato and add to bowl
  7. Dice onion and add to bowl
  8. Mince garlic and add to bowl
  9. Cut avocado into 1/2" cubes and add to bowl
  10. Add Goat Cheese
  11. Drizzle with about 2tablespoons of Olive Oil
  12. Add salt and Pepper to taste
  13. Mix contents of bowl together
  14. Chill salad for about 30 minute to an hour.
  15. Enjoy! Salad will stay good for about 2 days because of browning avocado! 


Bruschetta Eggs Benedict

This recipe is extremely easy and a delicious spin on an old classic!





Ingredients:

1 English Muffin
1 Powdered Packet Hollandaise Sauce 
1 C. Milk
1/3 Butter
Fresh Mozzarella Cheese
4 slices Canadian Bacon
1 Heirloom Tomato
1/2 Onion
Fresh Basil
2 Eggs
1/2 Avocado
Non-stick spray
Salt
Pepper

let's start cooking!

  1. Slice your English Muffin in half and toast in toaster
  2. Slice mozzarella into pieces about 1/4" thick
  3. Once the toast is finished, place it onto a flat plate. You will be stacking lots of goodies onto them so make sure the lay flat! 
  4. Place mozzarella slices directly onto English Muffin
  5. Start making Hollandaise sauce according to the directions on the packet. You will use the milk and butter for this step.  You may set the sauce to the side on low heat to keep warm until needed.
  6. In a pre-heated (medium heat) cook canadian bacon until browned on each side.
  7. Place 2 slices of browned Canadian Bacon onto each English Muffin half. The warmth of the Canadian Bacon will warm and melt the cheese slightly. 
  8. Slice Heirloom Tomato thinly, place about two slices on each half of the English Muffin, on top of the Canadian Bacon. Save extra tomatoes for another time! 
  9. Take about 8 to 10 leaves of Fresh Basil, wash and dry them, and slice length ways into skinny strips.
  10. Place Fresh Basil onto Heirloom Tomatoes.
  11. Next, slice your onion thinly and place on top of the Heirloom tomatoes.
  12. In the same pan you cooked the Canadian Bacon in, spray a few spritzes of non-stick spray and cook your eggs. You may wish to scramble, fry or poach the egg, any way you cook them will be fine.
  13. Once the egg is finished, place it on top of the onions on English Muffin, your Eggs Benedict is starting to come together and get very tall at this point.
  14. Now stir your sauce a few times and put about 1/4C to 1/3C Hollandaise sauce on each half of the English Muffin
  15. Slice up your avocado and place it on top for a garnish. 
  16. Add some salt and pepper to taste and ENJOY! 

Quick Caprese Mini Pizzas

This recipe is quick and easy to both make and clean-up!






Ingredients:

1 English Muffin
1 Jar Pesto Spread (you won't use the whole jar!)
1 Heirloom Tomato 
1/2 Onion (any color will work)
2 String Cheese Sticks (preferably mozzarella) 
Salt
Papper


let's start cooking!




Pre-heat your oven to the Broil setting or 500 degrees. 

Line a cookie sheet with a piece of aluminum foil.
Take your English Muffin and slice it. You may slice it in half for thick crust or thirds for thinner crust. I sliced mine in thirds.




Take the Pesto Spread and spread a layer onto each of the English Muffin slices. You may use as much or as little as you like. I used about 2 to 3 Tablespoons for each slice. 


After you put Pesto Spread on each slice, place each of the slices onto the cookie sheet.

Wash and then thinly slice your Heirloom Tomatoes.



Place the thinly sliced Heirloom Tomato slices onto each of the English Muffin mini pizzas. Put about 3 to 4 tomatoes onto each English Muffin. (You may have extra tomatoes, save them for another recipe or a snack, Heirloom Tomatoes are great raw!)

Next, slice your onions and place them onto each of the English Muffin mini pizzas. 


Now take your string cheese out of the packaging and slice into tiny circles, like shown below!


Add as much cheese as you would like to each of your mini pizzas.



Slide the cookie sheet of mini pizzas into the oven. It is perfectly alright if the oven is not fully preheated, the pizzas will still cook! 


Place the mini pizzas into the oven for about 8-10 minutes. Make sure to check on them after 5 minutes. The pizzas pictured below are not done yet, you want the cheese to start to bubble and get golden brown on the edges.

These pizzas are done! Take them out of the oven and let cool for 4 or 5 minutes.


While they are cooling, clean up!



Take the foil and crumble it into a ball, be sure to not drop any crumbs! Clean up is easy-peezy!





Now Enjoy your Caprese Mini Pizzas!!!
